- 4 medium boneless skinless chicken breasts, about 6 ounces each
- 1/4 cup olive oil
- 3 tbsp fresh lemon juice
- 1 tsp lemon zest
- 3 cloves garlic, minced
- 1 tsp Dijon mustard
- 2 tbsp fresh parsley, chopped
- 1 tsp dried oregano
- 1/2 tsp dried thyme
- 1 tsp kosher salt
- 1/2 tsp black pepper
Instructions
- Step: In a bowl or zip-top bag, mix the olive oil, lemon juice, lemon zest, garlic, Dijon mustard, parsley, oregano, thyme, salt, and black pepper.
- Step: Pound the chicken breasts to an even thickness if needed.
- Step: Add the chicken to the marinade and turn to coat. Cover and refrigerate for at least 30 minutes, or up to 8 hours.
- Step: Preheat the grill to medium-high heat and lightly oil the grates.
- Step: Remove the chicken from the marinade and discard the used marinade.
- Step: Grill the chicken for 5 to 7 minutes per side, until lightly charred and the thickest part reaches 165°F.
- Step: Transfer to a clean plate and rest for 5 minutes before slicing and serving.
