Description

Skip takeout and make this shrimp stir-fry with noodles at home! It’s savory, filling, and full of so much delicious flavor.


Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 14 oz lo mein noodles
  • 3 tbsp vegetable oil, divided
  • 2 cups broccoli florets
  • 1 red bell pepper, thinly sliced
  • 1 medium carrot, julienned or shredded
  • 2 cloves garlic, minced
  • 1 tsp freshly grated ginger
  • 2 scallions, sliced, white and green parts separated
  • 3 tbsp hoisin sauce
  • 2 tbsp reduced sodium soy sauce
  • 1 tbsp sesame oil
  • 1/4 cup reduced sodium vegetable broth
  • 1 tbsp honey
  • 1 tsp cornstarch

Instructions

  1. Step 1: Cook the noodles according to package directions until al dente. Drain and toss with a small amount of oil to prevent sticking. Set aside.
  2. Step 2: In a small bowl, whisk together the sauce ingredients until well combined. Set aside.
  3. Step 3: Heat 1 tbsp of oil in a large wok or skillet over medium-high heat. Add the shrimp in a single layer and cook for 2-3 minutes on each side until pink and opaque. Remove to a plate.
  4. Step 4: Add the remaining 2 tbsp of oil to the pan. Stir-fry the broccoli, bell pepper, and carrots for 2-3 minutes until crisp-tender. Add the garlic, ginger, and scallion whites. Cook for 30 seconds until fragrant.
  5. Step 5: Pour the sauce into the pan and bring to a simmer. Let it thicken slightly, about 1 minute.
  6. Step 6: Add the cooked noodles and shrimp to the pan. Toss everything together until well coated in the sauce and heated through, for about 1-2 minutes.
  7. Step 7: Garnish with scallion greens and serve immediately.

Notes

Pat the shrimp dry with paper towels before cooking to ensure a better sear. Make sure the wok or skillet is very hot before adding ingredients to achieve the best stir-fry texture.
