This Hawaiian Fried Garlic Chicken delivers a delicious adventure with tender, crispy pieces enveloped in a sticky, savory garlic sauce. Perfect for a quick weeknight dinner or a tropical-inspired feast.

  • 2 pounds chicken, cut into cubes
  • 1 tablespoon cornstarch (for chicken)
  • 3/4 cup soy sauce
  • 3/4 cup sugar
  • 1/2 cup garlic, crushed or finely chopped
  • 1 tablespoon vegetable oil (for marinade)
  • 1 1/2 cups flour
  • 1/2 cup cornstarch (for coating)
  • 1/2 teaspoon salt
  • 1/4 cup green onion, chopped
  • 1 tablespoon sesame oil
  • 1 teaspoon red chili flakes
  • 1/2 teaspoon white pepper
  • Vegetable oil (for frying)

Instructions

  1. Step 1: In a small saucepan, combine soy sauce and sugar over medium heat, bringing to a gentle boil for 2-3 minutes until it thickens. Stir in garlic, green onion, sesame oil, chili flakes, and white pepper. Boil for another minute, remove from heat, and set aside to cool.
  2. Step 2: In a large bowl, combine chicken, 4-5 tablespoons of the prepared garlic sauce, 1 tablespoon cornstarch, and 1 tablespoon vegetable oil. Mix well, cover, and marinate for 30 minutes at room temperature.
  3. Step 3: In a separate bowl, whisk together flour, 1/2 cup cornstarch, and salt. Stir in 3 tablespoons of the garlic sauce until small clumps form.
  4. Step 4: Heat 2 inches of vegetable oil in a deep frying pan to 350°F–375°F.
  5. Step 5: Dredge marinated chicken in the flour mixture, pressing firmly. Fry in batches for 3-4 minutes until golden and crispy. Drain on paper towels.
  6. Step 6: Warm the remaining garlic sauce over low heat and toss with the crispy chicken, or serve on the side for dipping.

Notes

Serve alongside steamed jasmine rice or a side of fresh slaw. You may also swap chicken for firm tofu for a plant-based version.
