Description

Instructions

  1. Marinate the Shrimp: In a medium bowl, combine lime juice, lime zest, minced chipotle peppers (or chipotle powder), minced garlic, and a pinch of salt and pepper. Toss the shrimp in the marinade and let sit for 10 minutes.
  2. Cook the Shrimp: Heat olive oil in a large skillet over medium-high heat. Add the marinated shrimp in a single layer and cook for 2–3 minutes on each side, or until the shrimp is pink and opaque.
  3. Prepare the Base and Toppings: Prepare your base of choice (rice, quinoa, or cauliflower rice) according to package instructions. Slice the avocado and rinse black beans.
