Description

This Walking Taco Casserole offers a substantial twist on the classic walking taco, layering seasoned beef, crunchy chips, and fresh toppings into a shareable, comforting dish. A smoky chipotle cream swirl adds a delightful kick and creamy coolness.


Ingredients

  • 500g ground beef, 80/20 blend
  • 1 Tbsp vegetable oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 30g taco seasoning, halal-certified
  • 200g black beans, drained and rinsed
  • 200g frozen corn kernels
  • 300g crushed tortilla chips
  • 250g shredded cheddar cheese
  • 200g shredded Monterey Jack cheese
  • 200g sour cream
  • 2 Tbsp minced chipotle peppers in adobo
  • 2 Tbsp lime juice
  • 1 Tbsp honey (optional)
  • ¼ cup chopped cilantro, plus extra for garnish
  • Lime wedges (optional garnish)

Instructions

  1. Preheat & Grease: Preheat oven to 180°C (350°F) and grease a 9×13 inch cast-iron skillet.
  2. Sauté Aromatics: Sauté diced onion in oil until softened (3-4 minutes), then add garlic and cook for 30 seconds.
  3. Brown Beef & Season: Brown ground beef, then stir in taco seasoning and cook for 1 minute.
  4. Combine Bean Mixture: Combine black beans, corn, and half of the cheeses in a bowl.
  5. Layer Base: Spread half of the crushed tortilla chips in the skillet.
  6. Build Layers: Layer beef, bean mixture, remaining chips, and remaining cheese.
  7. Bake: Bake for 22-25 minutes, until cheese is melted and bubbly.
  8. Prepare Chipotle Cream: Whisk together sour cream, chipotle peppers, lime juice, honey (if using), and cilantro.
  9. Swirl & Garnish: Dollop chipotle cream over casserole, swirl, and garnish with cilantro and lime wedges.

Notes

Using a cast-iron skillet ensures a crispy base and even cooking. Adjust the amount of chipotle peppers to control the spice level.
