Description

Grilled Thai Coconut Chicken Skewers are a delightful dish that brings the tropical flavors of Thailand to your dinner table, perfect for family gatherings.

Ingredients

Scale
  • 2 tablespoons fresh ginger (grated)
  • 3 cloves garlic (minced)
  • 1/4 cup soy sauce (use tamari for gluten-free)
  • 2 tablespoons dark soy sauce (optional)
  • 1 cup coconut milk
  • 2 tablespoons brown sugar (or honey)
  • 2 tablespoons fresh lime juice (freshly squeezed)
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 pound chicken (dark meat preferred)
  • 6 pieces skewers (soaked in water for 30 minutes)

Instructions

  1. Step: In a mixing bowl, whisk together fresh ginger, garlic, soy sauces, coconut milk, brown sugar, fresh lime juice, salt, and pepper until well blended and smooth.
  2. Step: Add your chicken chunks to the marinade, ensuring they are thoroughly coated. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, or up to 4 hours for enhanced flavor.
  3. Step: Thread the marinated chicken pieces onto your soaked skewers, leaving a little space between each piece to allow for even cooking.
  4. Step: Preheat your grill or grill pan to a medium-high temperature, then lightly oil the grates to prevent sticking.
  5. Step: Place the skewers on the grill and cook for 4-5 minutes on each side. Turn them until charred and ensure the chicken reaches an internal temperature of 74°C/165°F.
  6. Step: Squeeze fresh lime juice over the skewers just before serving to elevate the flavors further, and enjoy your tropical feast right away!

Notes

Serve with a refreshing Thai cucumber salad for added crunch and freshness. Marinate chicken overnight for richer flavor and cater to dietary preferences with firm tofu or seasonal vegetables.
