Description

Sweet Baby Rays Crockpot Chicken is an easy, flavorful dish perfect for busy nights, combining juicy chicken breasts and tangy BBQ sauce.

Ingredients

Scale
  • 2 pounds boneless, skinless chicken breasts
  • 1 cup Sweet Baby Rays BBQ sauce
  • 1/4 cup brown sugar
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt to taste
  • Pepper to taste
  • 1 cup diced onions
  • 1 cup diced bell peppers
  • Smoked paprika to taste
  • Cayenne pepper to taste

Instructions

  1. Step 1: Season the chicken breasts with garlic powder, salt, and pepper, ensuring they are evenly coated.
  2. Step 2: In a bowl, whisk together the Sweet Baby Rays BBQ sauce, brown sugar, apple cider vinegar, and olive oil.
  3. Step 3: Place the seasoned chicken in the crockpot and pour the sauce mixture over it, coating every piece.
  4. Step 4: Cover and set the crockpot to cook on low for 4-6 hours or on high for 2-3 hours.
  5. Step 5: Once done, shred the chicken using two forks.
  6. Step 6: Return the shredded chicken to the crockpot, mixing it with the remaining sauce.
  7. Step 7: Serve hot over rice or in sandwiches.

Notes

For extra flavor, consider marinating the chicken overnight in the sauce. Leftovers can be stored in the fridge for 3-4 days or frozen for up to 2-3 months.
