Description

This viral cottage cheese sweet potato beef bowl is packed with protein and has the perfect balance of sweet, savory and spicy. It’s a satisfying dinner that comes together in about 30 minutes!


Ingredients

Scale
  • 2 medium/large sweet potatoes, cubed
  • 2 teaspoons olive or avocado oil
  • ½ teaspoon sea salt
  • ½ teaspoon garlic powder
  • â…› teaspoon black pepper
  • 1 pound lean ground beef
  • 23 tablespoons taco seasoning
  • 2 tablespoons water, if needed
  • 1 cup cottage cheese
  • 1 avocado, chopped
  • 4 teaspoons hot honey
  • hot sauce
  • pickled onions and/or hot and sweet jalapeños

Instructions

  1. Step 1: Preheat the oven to 400°F. Toss cubed sweet potatoes with oil, salt, pepper and garlic powder, spread evenly on a baking sheet and roast for 20 minutes, flipping halfway through.
  2. Step 2: Heat a skillet over medium-high heat, cook ground beef breaking it apart with a spatula until browned (6-7 minutes), then stir in taco seasoning and water if needed.
  3. Step 3: Divide roasted sweet potatoes between four bowls and top with cooked ground beef, cottage cheese, avocado, hot sauce, and a drizzle of hot honey.

Notes

Store beef, sweet potatoes, and toppings in separate airtight containers in the fridge for 3–4 days. Reheat the beef and sweet potatoes before assembling with fresh toppings.
