This spicy Gochujang swirl mayo recipe adds a creamy, spicy, and delicious burst of flavor to meals. Made in minutes, it features the vibrant Gochujang, toasted sesame oil, and crunchy sesame seeds for an irresistible nutty aroma and versatile condiment.
Ingredients
- 1 cup (240g) full-fat mayonnaise, (organic, cage-free egg mayo)
- 2–3 tablespoons (30-45g) Gochujang (Korean chili paste), (adjust to preferred spice level, or use certified gluten-free brand)
- 1 teaspoon (5ml) toasted sesame oil
- 1 tablespoon (15ml) rice vinegar, (apple cider vinegar works as substitute)
- 1 teaspoon (5g) honey or sugar, (maple syrup is a vegan alternative)
- 0.5 teaspoon (2g) garlic powder
- 1 teaspoon (3g) toasted sesame seeds, (plus more for garnish, black sesame seeds also offer great visual contrast)
Instructions
- Combine Wet Ingredients: In a medium mixing bowl, combine the mayonnaise, toasted sesame oil, rice vinegar, honey or sugar, and garlic powder. Whisk vigorously until the mixture is completely smooth and creamy (approx. 1 minute).
- Add Gochujang: Gently spoon in the Gochujang, purposefully leaving some distinct streaks for that signature swirl effect. Alternatively, mix thoroughly for a uniform orange-red color (approx. 30 seconds).
- Stir in Sesame Seeds & Chill: Stir in the toasted sesame seeds for texture. Transfer to a serving bowl or airtight container. Allow to rest in the fridge for at least 15 minutes before serving for best flavor.
Notes
Adjust Gochujang for desired spice level. For a uniform color, mix Gochujang thoroughly; for a swirl, gently spoon it in. If sauce is too thin, whisk in more mayonnaise; if too thick, add a splash of water or rice vinegar. A mason jar can be used for mixing and storage. For flavor boosts, consider grated ginger, a dash of low-sodium soy sauce, fresh lime juice, or red pepper flakes. If flavor is flat, add a pinch of salt or more honey; if too tangy, add honey or sugar.
