Instructions

  1. Activate Yeast: In a large bowl, combine warm water, sugar, and yeast. Let stand until foamy for 5-10 minutes.
  2. Make the Dough: Stir in melted butter and salt, then gradually add flour, mixing until a shaggy dough forms. Turn onto a lightly floured surface and knead for 8-10 minutes until smooth and elastic.
  3. First Rise: Lightly grease a clean bowl with olive oil. Place dough, cover, and let rise in a warm spot for 1 hour, or until visibly doubled in size.
  4. Shape Cheesy Pretzels: Punch down dough and divide into 8 pieces. Roll each into a 25 cm (10 inches) strip. Spoon 2-3 tablespoons of cheesy smoked paprika cheddar filling down the center, then fold and seal tightly to form a rope. Shape each rope into a pretzel twist, pressing gently to secure; this process takes 15-20 minutes.
  5. Boil Briefly: Bring 2 L water to a rolling boil; carefully add baking soda. Gently lower each pretzel into the bath for 20-30 seconds, flipping once. Do not overcrowd.
