Description

This smothered chicken thighs recipe combines bone-in chicken thighs with a rich gravy made from onions, garlic, and chicken stock.   • 4 tablespoons unsalted butter
  • 1 yellow onion (sliced)
  • 2 garlic cloves (minced)
  • 1 teaspoon mustard powder
  • 6 tablespoons all-purpose flour
  • 4 cups chicken stock
  • 3 tablespoons fresh parsley (chopped)

Instructions

  1. Season: Combine salt, pepper, onion powder, garlic powder, paprika, and Creole seasoning in a small bowl; rub over chicken thighs, ensuring to lift the skin.
  2. Brown: Heat oil in a large Dutch oven over medium-high heat and brown the chicken on both sides for 6 minutes, then set aside.
  3. Sauté: Add butter and sliced onions to the pot, cooking until softened, then add garlic and cook for 30 seconds.
  4. Make Gravy: Stir in mustard powder and flour, then gradually whisk in the chicken stock until smooth and bring to a low boil.
  5. Cook: Place chicken back in the gravy; for Oven Method, cover and bake at 400°F for 30 minutes, then uncover for 10 minutes. For Slow Cooker Method, transfer to a slow cooker and cook on low for 5-6 hours or high for 3-4 hours.
  6. Serve: Garnish with fresh parsley and spoon gravy over the chicken.

Notes

Ensure chicken reaches an internal temperature of 165°F before serving. Leftovers can be stored in the refrigerator for up to 3 days or frozen for up to 3 months.
