Ingredients

Scale
  • 500 g (1.1 lb) Ground Beef: Finely crumbled, 80/20 lean-to-fat ratio recommended.
  • 300 g (10 oz) Broccoli Florets: Fresh, roughly the same size.
  • 4 Cloves Garlic: Freshly minced.
  • 1 tsp (5 ml) Freshly Grated Ginger: Releases more flavor than paste.
  • 2 tbsp (30 ml) Honey: Good quality honey for best flavor.
  • 3 tbsp (45 ml) Soy Sauce (Low-Sodium): Adjust amount to taste.
  • 1 tbsp (15 ml) Toasted Sesame Oil: Adds rich, nutty aroma.
  • 0.5 tsp (2.5 ml) Smoked Paprika: For smoky flavor.
  • 1 tsp (5 ml) Cornstarch mixed with 2 tbsp (30 ml) Water: Thickens the sauce.
  • 2 tbsp (30 ml) Vegetable Oil: High smoke point.
  • Pinch of Salt and Freshly Ground Black Pepper: To taste.
  • 1 tbsp (15 g) Toasted Sesame Seeds: For garnish.
  • 2 tbsp (15 g) Green Onion Tops: Thinly sliced, for garnish.

Instructions

  1. Prepare the Sauce: Whisk together honey, soy sauce, garlic, ginger, sesame oil, smoked paprika, and cornstarch slurry until smooth.
  2. Brown the Ground Beef: Stir-fry ground beef in hot oil until browned and crumbly, about 3-4 minutes.
  3. Stir-Fry the Broccoli: Stir-fry broccoli florets in oil until bright green and tender-crisp, about 2-3 minutes.
  4. Combine and Glaze: Return beef to wok with broccoli, pour sauce over, and toss to coat.
  5. Thicken the Sauce: Cook for 2 minutes, tossing, until sauce thickens.
  6. Taste and Adjust: Adjust seasoning with soy sauce, honey, or smoked paprika as needed.
  7. Serve and Garnish: Plate and garnish with sesame seeds and green onion.

Notes

For best results, use high heat and prepare all ingredients before starting to cook. Don’t overcrowd the wok for even cooking.
