- 2 lbs boneless skinless chicken breasts or thighs
- 1 ½ cups barbecue sauce
- 1 large apple, peeled and diced
- ½ cup chicken broth
- 1 small onion, chopped
- 2 garlic cloves, minced
- 1 tbsp apple cider vinegar
- 1 tbsp brown sugar
- 1 tsp smoked paprika
- ½ tsp black pepper
- ½ tsp salt
- ½ tsp chili powder (optional)
Instructions
- Step: Dice the apple and onion and mince the garlic.
- Step: Place chicken in the bottom of the slow cooker.
- Step: Add apples, onion, and garlic on top of the chicken.
- Step: In a bowl mix barbecue sauce, chicken broth, apple cider vinegar, brown sugar, paprika, salt, pepper, and chili powder.
- Step: Pour the sauce mixture over the chicken.
- Step: Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours.
- Step: Remove the cooked chicken and shred it using two forks.
- Step: Return the shredded chicken to the slow cooker and stir into the sauce.
- Step: Cook for another 15 to 20 minutes to absorb the sauce.
- Step: Serve warm in sandwiches, wraps, or over rice.
Notes
For juicier results, use chicken thighs. You can customize this by adding diced jalapeños for spice or replacing brown sugar with maple syrup for a richer flavor.
