- 1.5 kg (3 lb) baby potatoes or Yukon Gold, washed
- 1 tbsp olive oil
- ½ tsp salt
- ¼ tsp black pepper
- 1 cup shredded cheddar cheese
- ½ cup plant-based crispy protein crumbles
- ½ cup sour cream
- ¼ cup milk
- 2 tbsp butter
- 3 tbsp chopped green onions
- ¼ tsp garlic powder
- Extra salt and pepper to taste
Instructions
- Prepare the potatoes: Wash and dry the potatoes. If large, cut into halves or quarters. Place them in the slow cooker. Drizzle with olive oil and sprinkle with salt and pepper. Toss gently to coat.
- Slow cook: Cover and cook on HIGH for 3–4 hours, or LOW for 6–7 hours until potatoes are fork-tender.
- Slightly mash: Use a potato masher or fork to lightly press the potatoes, keeping some chunks for texture.
- Add creamy ingredients: Add butter, milk, sour cream, and garlic powder. Stir gently until creamy.
- Add toppings: Sprinkle cheese and plant-based crumbles on top. Cover for 5–10 minutes until cheese melts.
- Finish and serve: Add chopped green onions. Taste and adjust salt and pepper if needed. Serve warm.
Notes
Store leftovers in an airtight container for up to 4 days. Reheat in the microwave or oven until hot, adding a splash of milk if needed to restore creaminess.
