Description

Lightly floured boneless chicken breasts are pan fried until golden and crispy before being added to a mouth-watering garlic cream sauce!


Ingredients

Scale
  • 23 boneless chicken breasts (large, skinless, halved horizontally to make 4)
  • 4 tablespoons flour
  • 4 tablespoons parmesan cheese (finely grated, fresh)
  • 2 teaspoon salt
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper (cracked)
  • 5 tablespoons olive oil
  • 2 tablespoons butter
  • 1 small onion (finely chopped)
  • 1 whole head of garlic (peeled and divided into 1012 cloves)
  • 1 1/4 cup chicken broth
  • 1 1/4 cup heavy cream
  • 1/2 cup parmesan cheese (finely grated, fresh)
  • 2 tablespoons fresh parsley

Instructions

  1. Season: Season the chicken with salt, garlic powder and pepper.
  2. Coat: In a shallow bowl, combine the flour and parmesan cheese. Dredge chicken in the flour mixture and shake off excess.
  3. Heat: Heat 2 tablespoons of oil and 1 tablespoon butter in a large skillet over medium-high heat.
  4. Fry: Fry chicken breasts until golden on each side and cooked through. Transfer to a warm plate.
  5. Repeat: Wipe pan and repeat with remaining oil, butter, and chicken breasts. Transfer to plate.
  6. Sauté: Reduce heat to medium. Sauté the onion in the remaining oil/juices until softened.
  7. Garlic: Smash 6 whole cloves of garlic with the blunt edge of a knife.
  8. Deglaze: Add remaining oil and butter. Sauté smashed and whole garlic cloves until fragrant. Add broth to deglaze and simmer until reduced by half.
  9. Cream: Reduce heat to medium-low. Pour in the cream and simmer for 2-3 minutes.
  10. Cheese: Mix in parmesan cheese. Cook gently for 2-3 minutes until cheese melts. Season with salt and pepper.
  11. Simmer: Add the chicken back into the pan and simmer for 2-3 minutes to thicken the sauce.
  12. Finish: Garnish with parsley and black cracked pepper.

Notes

You can use heavy cream, whipping cream or thickened cream in the sauce. For a lightened up sauce, use evaporated milk or half and half.
