Description

This beef enchiladas recipe is seasoned ground beef wrapped in flour tortillas and topped with red enchilada sauce and cheese, then baked to perfection.


Ingredients

  • 2 teaspoons vegetable oil
  • 1 1/2 pounds ground beef
  • 1/2 cup onion, finely diced
  • 1 teaspoon minced garlic
  • 1 packet taco seasoning
  • 2 10 ounce cans red enchilada sauce
  • 2 1/2 cups shredded cheddar cheese
  • 10 flour tortillas (8 inch size)
  • 1/2 cup sliced black olives
  • 1/4 cup sliced green onions
  • cooking spray

Instructions

  1. Step 1: Preheat the oven to 350 degrees F and coat a 9″x13″ pan with cooking spray.
  2. Step 2: Heat the vegetable oil in a large pan over medium high heat; add the ground beef and cook for 3-4 minutes, breaking it up with a spatula.
  3. Step 3: Add the onion and cook for 4-5 minutes until softened, then add the garlic and cook for 30 seconds.
  4. Step 4: Add the taco seasoning along with 1 tablespoon of water and stir until coated.
  5. Step 5: Spread 1 cup of enchilada sauce over the bottom of the baking pan.
  6. Step 6: Warm the tortillas until soft, place 1 1/2 tablespoons of cheese down the center of each, and divide the beef mixture evenly.
  7. Step 7: Roll up each tortilla tightly and arrange them in the baking dish.
  8. Step 8: Pour 1 cup of enchilada sauce over the tops of the tortilla rolls and sprinkle the remaining cheese over the sauce.
  9. Step 9: Bake for 20 minutes or until cheese has melted and sauce is bubbling.
  10. Step 10: Top with olives and green onions, then serve.

Notes

Use 90% lean ground beef for best results. To make tortillas pliable, steam them in the microwave for 1 1/2 minutes covered with a damp paper towel.
