Description
This beef enchiladas recipe is seasoned ground beef wrapped in flour tortillas and topped with red enchilada sauce and cheese, then baked to perfection.

- 2 teaspoons vegetable oil
- 1 1/2 pounds ground beef
- 1/2 cup onion, finely diced
- 1 teaspoon minced garlic
- 1 packet taco seasoning
- 2 10 ounce cans red enchilada sauce
- 2 1/2 cups shredded cheddar cheese
- 10 flour tortillas (8 inch size)
- 1/2 cup sliced black olives
- 1/4 cup sliced green onions

Instructions
- Step 1: Preheat the oven to 350 degrees F and coat a 9″x13″ pan with cooking spray.
- Step 2: Heat the vegetable oil in a large pan over medium high heat; add the ground beef and cook for 3-4 minutes, breaking it up with a spatula.
- Step 3: Add the onion and cook for 4-5 minutes until softened, then add the garlic and cook for 30 seconds.
- Step 4: Add the taco seasoning along with 1 tablespoon of water and stir until coated.
- Step 5: Spread 1 cup of enchilada sauce over the bottom of the baking pan.
- Step 6: Warm the tortillas until soft, place 1 1/2 tablespoons of cheese down the center of each, and divide the beef mixture evenly.
- Step 7: Roll up each tortilla tightly and arrange them in the baking dish.
- Step 8: Pour 1 cup of enchilada sauce over the tops of the tortilla rolls and sprinkle the remaining cheese over the sauce.
- Step 9: Bake for 20 minutes or until cheese has melted and sauce is bubbling.
- Step 10: Top with olives and green onions, then serve.
Notes
Use 90% lean ground beef for best results. To make tortillas pliable, steam them in the microwave for 1 1/2 minutes covered with a damp paper towel.
