Baked chicken thighs with a sweet and savory apricot glaze. Tender chicken thighs are coated in a rich sauce made with apricot preserves, Dijon mustard, and soy sauce for a flavor-packed dish.

- 1 cup apricot jam
- ¼ cup finely diced onions
- 2 tablespoons soy sauce
- 1 tablespoon honey
- 1 tablespoon dijon mustard
- 1 tablespoon apple cider vinegar
- 1 teaspoon minced garlic
- 1 teaspoon ground ginger
- â…› teaspoon red pepper flakes (optional)
- 6 chicken thighs
- fresh parsley for garnish (optional)
Instructions
- Make sauce: In a saucepan over medium heat, combine jam, onions, soy sauce, honey, dijon, vinegar, garlic, ginger, and red pepper flakes; heat until jam has melted and sauce is warmed through.
- Prepare chicken: Trim excess fat or skin from chicken thighs, place in a lightly greased baking dish, and sprinkle lightly with salt and pepper.
- Bake: Pour the prepared sauce over the chicken and bake uncovered in a preheated 375°F oven for 20 minutes.
- Baste: Remove from oven, spoon the sauce from the pan over each chicken thigh, then return to the oven for another 20-25 minutes until chicken is cooked through and beginning to brown.
- Rest and serve: Remove from pan, let rest for 5 minutes, skim any grease from the remaining sauce, and garnish with fresh parsley if desired.
Notes
Use an 8×11-inch dish or similar. Chicken is fully cooked at 165°F, but cooking to 180-190°F makes dark meat more tender. If desired, you can place under the broiler for a few minutes at the end to caramelize the sauce further.
