Description

These roasted bone-in chicken breasts are a total game changer! They feature crispy, golden skin and incredibly tender, juicy meat. By searing the chicken first and roasting it on a rack, you achieve the perfect texture every time.


Ingredients

  • 4 bone-in, skin-on chicken breasts
  • 1/2 tsp salt
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp ground black pepper
  • 1/4 tsp paprika
  • 1/4 tsp chili powder
  • 1/2 cup avocado oil (or canola/vegetable oil)

Instructions

  1. Step: Preheat the oven to 400°F. Line a baking sheet with foil and place a cooking rack on top. Pat the chicken breasts dry with paper towels to ensure the skin crisps up.
  2. Step: In a small bowl, combine salt, garlic powder, onion powder, black pepper, paprika, and chili powder. Rub the spice mixture all over the chicken breasts, covering both sides.
  3. Step: In a large skillet, heat the oil over medium-high heat until hot.
  4. Step: Carefully place the chicken breasts skin-side down into the hot skillet. Cook for 2 minutes, until the skin is golden and crispy. Flip and cook for another 2 minutes on the other side.
  5. Step: Place the seared chicken breasts onto the prepared baking sheet with the rack. Drizzle 1 tsp of the oil from the skillet onto each chicken breast.
  6. Step: Transfer the baking sheet to the preheated oven. Bake for 45 minutes, or until the internal temperature reaches 165°F.
  7. Step: Remove from the oven and let the chicken sit for 10 minutes before slicing.

Notes

Ensure the chicken is patted completely dry before seasoning to achieve the crispiest skin possible. Use a high-smoke point oil for searing to prevent smoking in the kitchen.
