Lemon Pepper Chicken Thighs is a classic recipe that’s really easy to make and packed full of flavor. These chicken thighs are seasoned and baked in the oven to come out tender and juicy.

- 2.5 lbs chicken thighs, trimmed
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 1.5 tablespoons lemon pepper seasoning
- 1/2 teaspoon oregano
- 1/2 teaspoon thyme
- 1 teaspoon garlic powder
- 1/4 teaspoon salt
- lemon wedges, for serving
- fresh cracked black pepper, to taste
- fresh parsley, for garnish
Instructions
- Step: Preheat oven to 400 degrees and line a baking dish with foil.
- Step: Remove chicken from the package, pat dry with a paper towel, and set aside on a cutting board or large plate.
- Step: In a small mixing bowl, whisk together olive oil and lemon juice, then rub the mixture onto the chicken on both sides and under the skin.
- Step: In a separate mixing bowl, stir together lemon pepper seasoning, oregano, thyme, garlic powder, and salt, then work the rub into the chicken on both sides and under the skin.
- Step: Place in the preheated oven and bake for 35-45 minutes or until a meat thermometer reads 165 degrees.
- Step: Squeeze fresh lemon over the chicken and garnish with fresh cracked black pepper and fresh parsley.
Notes
For boneless skinless thighs, reduce cooking time by ten minutes or until internal temperature reaches 165 degrees. You can substitute oregano and thyme with 1 teaspoon of Italian seasoning. Ground black pepper may be used instead of fresh cracked pepper.
