Description
A Cajun shrimp and rice skillet is the perfect one-pot meal, featuring jumbo shrimp seasoned with a bold Cajun blend and cooked atop a bed of flavorful rice and colorful peppers.

- 1 LB Jumbo shrimp
- 1 1/3 Cup Long Grain Rice
- 2 2/3 Cups Chicken broth
- 1/4 Cup Chopped Onion
- 1/4 Cup Chopped Red pepper
- 1/4 Cup Chopped Green pepper
- 4 Tablespoon Butter
- 1 Teaspoon Chopped Garlic
- 1 Tablespoon Cajun seasoning
- 1/2 Tablespoon Onion Powder
- 1/2 Tablespoon Garlic Powder
- 1/2 Tablespoon Paprika
- 1 Teaspoon Black Pepper
Instructions
- Seasoning Mix: To a bowl add in all your seasonings. Mix them together well and sit to the side.
- Heat Pan: Get your skillet or any pot of your choice. Place your pot on a medium-high stove and add in your butter.
- Sauté Veggies: Once your butter has melted down, add in your garlic, chopped red pepper, green pepper, and onions.
- Toast Rice: Add in your rice and stir for about 2 minutes.
- Season Rice: Add half of the mixed Cajun seasoning to the rice and mix well.
- Simmer Rice: Pour in your chicken broth and stir. Place a lid on the pan and allow to simmer for 15 minutes.
- Prepare Shrimp: Add your shrimp to a bowl. Drizzle olive oil onto your shrimp, add the remaining mixed seasoning generously, and rub in well.
- Cook Shrimp: Take the top off the pot and add in your shrimp. Allow to simmer for 5 to 7 more minutes.
- Final Touch: Mix well. At this point, you can add in more seasoning if you like.
Notes
If the dish is too spicy, use only half of the Cajun seasoning. You can substitute chicken broth with vegetable broth.
