Description

A nostalgic and incredibly moist old-fashioned zucchini bread that cleverly incorporates vegetables into a delightful treat, perfect for breakfast, snacks, or dessert.


Ingredients

  • 2 medium zucchinis, grated (about 2 cups)
  • 1 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Greasing a standard loaf pan will ensure your bread doesn’t stick.
  2. Prepare the Zucchini: Grate the zucchinis using a box grater and squeeze out excess moisture using a clean kitchen towel or cheesecloth. It’s essential to get rid of some of that liquid!
  3. Mix Wet Ingredients: In a large bowl, whisk together the granulated sugar, brown sugar, and vegetable oil until well combined. Add the eggs and vanilla extract, continuing to whisk until it looks nice and smooth.
  4. Combine Dry Ingredients: In another bowl, whisk together the flour, baking soda, baking powder, salt, and ground cinnamon.
  5. Combine Everything: Gently fold the dry ingredients into the wet mixture. Just until combined—don’t over-mix! Finally, stir in the grated zucchini and nuts if using.
  6. Pour into Pan: Scrape the batter into your prepared loaf pan, smoothing the top with a spatula.
  7. Bake: Bake for 50 to 60 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack before slicing.
