Description

This old fashioned beef and noodles recipe features tender beef simmered in a rich broth with aromatics and thickened into a velvety gravy, served over wide egg noodles for a satisfying and comforting meal.

Ingredients

Scale
  • 2.5 lbs chuck roast or stew meat, 1-inch cubes
  • 14 oz wide egg noodles
  • 5 cups beef broth, low sodium
  • 1 large onion, chopped
  • 2.5 cloves garlic, minced
  • Salt, to taste
  • Pepper, to taste
  • Parsley Pepper Dust, to taste
  • 2.5 tbsp all-purpose flour or cornstarch
  • 1.5 tbsp oil

Instructions

  1. Brown The Beef: Heat 1.5 tbsp oil in a pot over medium-high heat. Brown beef cubes in batches until golden, about 5-7 minutes per batch. Remove beef and set aside (avoid crowding the pot for best sear).
  2. Build Flavor Base: In the same pot, sauté chopped onion until soft, about 5 minutes. Stir in minced garlic and cook for 1 minute until fragrant.
  3. Deglaze And Thicken: Add 0.5 cup beef broth to the pot, scraping up any browned bits from the bottom. Stir in 2.5 tbsp all-purpose flour or cornstarch and cook for 1 minute. Gradually whisk in the remaining beef broth until the mixture is smooth.
  4. Simmer Beef: Return the browned beef to the pot. Bring the liquid to a simmer, then reduce heat to low, cover, and cook for 1.5-2 hours until the beef is fork-tender.
  5. Cook The Noodles: Increase heat to medium. Add the wide egg noodles to the simmering beef mixture. Cook for 8-10 minutes, stirring occasionally, until the noodles are tender and the sauce has thickened (if sauce is too thin, whisk 1 tsp cornstarch with 1 Tbsp water and stir in, cooking for 1 minute).
  6. Finish And Serve: Stir in a generous sprinkle of Parsley Pepper Dust. Taste and adjust seasoning as needed before serving.

Notes

For quick meals, use an Instant Pot (30-40 min pressure cook, then add noodles) or slow cook (6-8 hrs low/3-4 hrs high, add noodles last 30 min). Pre-chopped onions and garlic also save time. Consider using grass-fed beef, organic noodles, gluten-free noodles, or low-sodium broth for dietary adaptations.
