Ingredients

Scale
  • 500g (1 lb) Raw Shrimp, Peeled and Deveined: seasoned with Old Bay
  • 2 tbsp Old Bay Seasoning: for a savory and spicy kick
  • 2 tbsp Olive Oil: for sautéing the shrimp
  • 8 Small Flour Tortillas (8-inch): soft and pliable
  • 1 cup (240 ml) Cooked White Rice: long-grain, cooled
  • 1 cup (240 ml) Canned Black Beans, Rinsed and Drained: for hearty texture
  • 1 cup (100g) Shredded Cheddar Cheese: mild, medium, or sharp
  • ½ cup (120 ml) Greek Yogurt: full-fat or 2%
  • 1 Ripe Avocado: yielding to gentle pressure
  • 2 tbsp Fresh Lime Juice: freshly squeezed
  • ¼ cup (10g) Fresh Cilantro Leaves: plus extra for garnish
  • ½ tsp Ground Cumin: for warmth and depth
  • Salt and Pepper: to taste
  • 2 tbsp Toasted Pepitas: for crunch and garnish

Instructions

  1. Make Avocado-Lime Sauce: Blend avocado, lime juice, yogurt, cilantro, cumin, salt, and pepper until smooth.
  2. Season Shrimp: Toss shrimp with Old Bay seasoning, salt, and pepper.
  3. Cook Shrimp: Sauté shrimp in olive oil for 2-3 minutes per side, until pink and opaque.
  4. Warm Beans: Gently warm black beans over low heat.
  5. Warm Tortillas: Briefly warm tortillas on a dry skillet.
  6. Assemble Burritos: Spread sauce, rice, beans, shrimp, and cheese on a tortilla.
  7. Roll Burritos: Fold sides in, then roll tightly from bottom up.
  8. Toast Burritos: Toast seam-side down in a skillet for 1-2 minutes.

Notes

For a spicier burrito, add cayenne pepper to the Old Bay seasoning. Don’t overfill the tortillas for easier rolling.
