Description

A healthy, vibrant, and flavorful meal featuring roasted broccoli and teriyaki-glazed salmon served over a nutrient-dense base of brown rice and edamame.


Ingredients

  • 2 medium heads of broccoli, cut into florets
  • 4 (4–6 ounce) salmon filets
  • 2 cups cooked brown rice
  • 1 cup shelled edamame, fresh or frozen
  • 1 cup grated carrot
  • 1 tsp toasted sesame seeds
  • 1–2 handfuls of shredded cabbage
  • 2 green onions, trimmed and thinly sliced
  • 2 tsp arrowroot starch, cornstarch, or tapioca flour
  • ¼ cup cold water
  • ¼ cup low-sodium soy sauce
  • ¼ cup fresh orange juice
  • 1 tbsp rice vinegar
  • 1 tbsp honey
  • ½ tsp sesame oil
  • ½ tsp freshly grated ginger, very fine
  • 1 large garlic clove, minced
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat & Prep for Roasting: Preheat oven to 450°F (232°C) and line a baking sheet with parchment paper or aluminum foil.
  2. Roast the Broccoli: Spread broccoli florets on the baking sheet, drizzle with olive oil, season with salt and pepper, and roast for 15–20 minutes.
  3. Prepare the Salmon: Pat salmon filets dry with a paper towel and season both sides with salt and pepper.
  4. Make the Teriyaki Sauce: Whisk starch and cold water in a bowl. In a saucepan over medium-high heat, combine soy sauce, orange juice, rice vinegar, honey, sesame oil, ginger, and garlic; bring to a boil, then whisk in the starch slurry and simmer for 3–4 minutes until thickened.
  5. Add Salmon to Baking Sheet and Bake: Move roasted broccoli to one side of the tray, place salmon skin-side down in the space, and brush 1 tablespoon of teriyaki sauce on each filet.
  6. Bake Salmon to Perfection: Bake for 8–12 minutes until the salmon flakes easily with a fork.
  7. Prepare Rice and Edamame: Heat the edamame and brown rice according to package directions while the salmon bakes.
  8. Assemble Your Buddha Bowls: Place brown rice in bowls, top with roasted broccoli, teriyaki salmon, grated carrot, sliced green onion, shredded cabbage, and edamame; drizzle with extra sauce and sprinkle with sesame seeds.

Notes

For meal prep, store individual components in airtight containers for up to 3-4 days and reheat salmon and broccoli gently before assembling.
