Instructions

  1. Prepare Chicken: Slice the chicken breasts in half horizontally to create 4 cutlets and pound them using a meat mallet or rolling pin until 1/4 to 1/2 inch thick.
  2. Stuff: Sprinkle mozzarella cheese onto each cutlet, roll the chicken in half lengthwise, and secure with toothpicks.
  3. Breading Station: Set up three separate bowls: one with flour, one with beaten egg, and one with a mixture of breadcrumbs, 2 teaspoons Italian seasoning, salt, and pepper.
  4. Coat: Dip the chicken in the flour, then the egg, and finally the breadcrumb mixture.
  5. Air Fryer Method: Spray chicken with oil and cook at 380 degrees for 10 minutes, flip, and cook for an additional 5-10 minutes until internal temperature reaches 165 degrees.
  6. Oven Method: Preheat oven to 400 degrees, place chicken on a parchment-lined sheet pan, and bake for 20-30 minutes until internal temperature reaches 165 degrees.
  7. Prepare Sauce: Melt butter in a saucepan over medium heat, then stir in heavy cream, chicken broth, 1/2 teaspoon Italian seasoning, salt, and pepper; simmer for 3-4 minutes until thickened.

Notes
