  • 4 salmon fillets (6 oz each, skinless)
  • 2 tbsp olive oil (divided)
  • 1 tsp dried oregano
  • 1/2 tsp dried thyme
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup cherry tomatoes (halved)
  • 1/2 cup cucumber (diced)
  • 1/4 cup Kalamata olives (halved)
  • 1/4 cup feta cheese (crumbled)
  • 1/4 cup red onion (thinly sliced)

Instructions

  1. Step: In a medium saucepan, heat one tablespoon of olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant.
  2. Step: Add the rice to the pot and toast for 1-2 minutes, stirring constantly.
  3. Step: Pour in the broth, bring to a boil, then reduce the heat to low, cover, and simmer for 15-18 minutes, or until the liquid is absorbed and the rice is tender.
  4. Step: While the rice is simmering, pat the salmon fillets dry with a paper towel. In a small bowl, mix together the oregano, thyme, garlic powder, salt, and pepper.
  5. Step: Brush the salmon fillets with olive oil and generously season both sides with the herb mixture.
  6. Step: Heat one tablespoon of olive oil in a large skillet or pan over medium-high heat.
