Ingredients
- 1.5 cups long-grain white rice (rinsed)

- 1 cup cherry tomatoes (halved)

- 1/4 cup red onion (thinly sliced)
Instructions
- Step: In a medium saucepan, heat one tablespoon of olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant.
- Step: Add the rice to the pot and toast for 1-2 minutes, stirring constantly.
- Step: Pour in the broth, bring to a boil, then reduce the heat to low, cover, and simmer for 15-18 minutes, or until the liquid is absorbed and the rice is tender.
