Description

This viral Jennifer Aniston salad is the Friends cast’s lunch secret – fresh herbs, crunchy pistachios, and orzo come together in just 20 minutes for the most addictive high-protein salad you’ll make on repeat!


Ingredients

  • 2 cups orzo, cooked
  • 1 cup cucumber, diced
  • ¼ cup red onion, thin slices
  • 1 (389 ml) can chickpeas
  • ½ cup microbial-rennet feta
  • ¼ cup pistachios
  • ½ large avocado
  • 2 tbsp olive oil
  • 2 tbsp fresh lemon juice
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ cup fresh parsley, chopped
  • ¼ cup fresh mint, chopped

Instructions

  1. Step 1: Cook the orzo according to the instructions on the package and allow to cool.
  2. Step 2: Drain and rinse the chickpeas.
  3. Step 3: In a large bowl, combine all of the ingredients.
  4. Step 4: Mix to combine and adjust seasoning to taste.
