Description

The best Mediterranean beef bowls! These are a family favorite, made with jasmine rice and chickpeas, seasoned ground beef, tomatoes, cucumbers, hummus, feta and more. Delicious and easy to throw together for leftovers too!


Ingredients

Scale
  • 2 mini cucumbers, sliced
  • 1 cup cherry tomatoes, quartered
  • 1 ½ cups chicken stock or bone broth
  • 1 cup dry jasmine rice, rinsed well
  • kosher salt and pepper
  • 1 (14 ounce) can chickpeas, drained and rinsed
  • 2 teaspoons olive oil
  • 1 pound lean ground beef
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • ¼ teaspoon dried dill
  • 1 cup hummus
  • ¼ cup crumbled feta
  • chopped parsley and chives, for topping
  • pickled onions, for topping

Instructions

  1. Step: Chop cucumbers and tomatoes first.
  2. Step: Heat chicken stock in a saucepan over medium heat; once boiling, add rice, salt, and pepper, then simmer covered for 10 to 15 minutes until liquid is absorbed.
  3. Step: Stir chickpeas into the rice and keep warm.
  4. Step: Brown ground beef in olive oil with salt and pepper, then stir in garlic powder, oregano, and dill, cooking until browned and fat has cooked off.
  5. Step: Spoon 3 tablespoons of hummus in the bottom of each bowl and swirl around.
  6. Step: Add a scoop of rice with chickpeas and a scoop of ground beef.
  7. Step: Top with cucumbers, tomatoes, pickled onions, feta cheese, and fresh herbs.

Notes

Use a meat masher or wooden spoon to create tiny beef crumbles. Ideal for meal prep and lunch leftovers.
