This Maple Ginger Caramel Banana Cobbler is a comforting dessert featuring sweet caramelized bananas, warming ginger, and a crunchy toasted oat almond crumble. It’s perfect for a chilly evening and easy to share.

Ingredients

  • Bananas (500g / 1lb, sliced): Ripe but firm bananas are best.
  • Granulated Sugar (150g / â…” cup): For sweetness and caramelization.
  • Light Brown Sugar (60g / â…“ cup total): Adds molasses flavor.
  • Maple Syrup (4 Tbsp): Provides warm sweetness.
  • Freshly Grated Ginger (1.5 tsp): Adds a spicy kick.
  • Ground Cinnamon (¼ tsp + pinch): Enhances flavor.
  • Ground Nutmeg (¼ tsp): Adds warm aroma.
  • Vanilla Extract (1 tsp): Enhances sweetness.
  • Unsalted Butter (45g / 3 Tbsp): Adds richness.
  • All-Purpose Flour (200g / 1 ¾ cup): Base of the batter.
  • Baking Powder (1 tsp): Leavening agent.
  • Salt (¼ tsp): Balances sweetness.
  • Whole Milk (180ml / ¾ cup): Adds moisture.
  • Rolled Oats (100g / 1 cup): Adds texture to crumble.
  • Sliced Almonds (50g / ½ cup, toasted): Provides crunch.

Instructions

  1. Preheat & Prepare: Preheat oven to 190°C (375°F) and butter a 23cm (9-inch) baking dish.
  2. Macerate Bananas: Combine bananas, sugar, maple syrup, ginger, cinnamon, nutmeg, vanilla, and butter; let sit 15 minutes.
  3. Prepare Batter: Whisk flour, baking powder, and salt; gradually stir in milk.
  4. Assemble Cobbler: Spread banana mixture in dish, pour batter over, leaving some bananas visible.
  5. Craft Crumble: Combine oats, almonds, brown sugar, salt, and butter until crumbly.
  6. Top & Bake: Sprinkle crumble over batter and bake 35-40 minutes, until golden brown.
  7. Make Drizzle: Warm maple syrup, ginger, and salt for 2 minutes.
  8. Cool & Serve: Let rest 5 minutes, drizzle with sauce, and serve warm.

Notes

Toasting the almonds enhances their flavor. Don’t overmix the batter to avoid a tough cobbler.
