Description

These Lemon Blueberry Cottage Cheese Protein Bites are a guilt-free, protein-packed treat bursting with fresh lemon and blueberry flavors. They’re easy to make, require no baking, and are perfect for a quick energy boost.


Ingredients

  • 60g (½ cup) Vanilla Whey Protein Powder
  • 1 Lemon Zest
  • 30ml (2 Tbsp) Fresh Lemon Juice
  • 15ml (1 Tbsp) Honey
  • 80g (â…” cup) Fresh Blueberries
  • 30g (¼ cup) Almond Flour
  • 30g (¼ cup) Finely Chopped Toasted Almonds
  • 30ml (2 Tbsp) Melted Butter or Neutral Oil
  • Pinch of Salt
  • 60g (½ cup) Powdered Sugar (for glaze)
  • 15ml (1 Tbsp) Lemon Juice (for glaze)
  • 30ml (2 Tbsp) Blueberry Puree (for glaze)
  • 5ml (1 tsp) Water (for glaze, if needed)

Instructions

  1. Toast Almonds: Toast chopped almonds at 180°C (350°F) for 5-7 minutes until golden and fragrant.
  2. Prepare Glaze: Combine powdered sugar, lemon juice, and blueberry puree; heat until smooth.
  3. Combine Base: Mix cottage cheese, protein powder, lemon zest, lemon juice, honey, almond flour, melted butter, and salt.
  4. Fold in Blueberries: Gently fold in fresh blueberries.
  5. Shape Bites: Scoop batter onto parchment paper and shape into 3cm (1 inch) rounds.
  6. Chill Bites: Refrigerate for at least 30 minutes to firm.
  7. Glaze & Crunch: Drizzle with glaze and roll in toasted almonds.
  8. Serve: Arrange, drizzle with extra glaze, and garnish with blueberries and almonds.

Notes

For best results, use well-drained cottage cheese and fresh lemon juice. Toasting the almonds is crucial for enhancing their flavor.
