  • 2 large sweet potatoes, peeled and cut into 1 inch cubes
  • 1 1/2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1 pound lean ground beef
  • 1 teaspoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 2 cloves garlic, minced
  • 2 cups low fat cottage cheese
  • 1 large avocado, sliced
  • 1 fresh jalapeño, thinly sliced
  • 3 tablespoons sliced green onions
  • 1 lime, cut into wedges (optional)

Instructions

  1. Step 1: Preheat the oven to 425°F 220°C and line a large baking sheet with parchment paper.
  2. Step 2: In a large bowl toss the cubed sweet potatoes with olive oil chili powder smoked paprika garlic powder salt and pepper until evenly coated.
  3. Step 3: Spread the sweet potatoes in a single layer on the baking sheet and roast for 20 to 25 minutes flipping once halfway through until tender and caramelized on the edges.
  4. Step 4: While the sweet potatoes roast heat the olive oil in a large skillet over medium high heat.
  5. Step 5: Add the ground beef breaking it up with a wooden spoon and cook until browned and mostly cooked through.
  6. Step 6: Stir in chili powder smoked paprika cumin salt and pepper then cook for another 2 to 3 minutes to toast the spices.
  7. Step 7: Add the minced garlic to the skillet and cook for 1 minute more until fragrant then drain any excess grease if needed and reduce the heat to low to keep warm.
  8. Step 8: Slice the avocado thinly slice the jalapeño and chop the green onions while the beef finishes cooking.
  9. Step 9: To assemble each bowl add a generous scoop of roasted sweet potatoes to one side of the bowl.
  10. Step 10: Add a portion of the seasoned ground beef next to the sweet potatoes.
  11. Step 11: Spoon cottage cheese into another section of the bowl then tuck in slices of avocado.
  12. Step 12: Top each bowl with jalapeño slices and green onions and finish with a squeeze of fresh lime juice if desired then serve immediately while warm.

Notes

For the best texture make sure the sweet potatoes are spread out in a single layer on the baking sheet; if the pan is overcrowded they will steam instead of roast and you will miss out on those delicious caramelized edges.
