A quick and hearty dinner combining Mexican and Italian flavors, featuring ground beef, penne pasta, and melted cheese baked to perfection.

- 1 pound ground beef
- 1 ounce taco seasoning
- 15 ounces chunky salsa
- 1 red bell pepper, chopped
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried oregano
- 12 ounces penne pasta, cooked al dente
- 2 cups shredded Mexican blend or Monterey Jack cheese, divided
- 1/2 cup sour cream
Instructions
- Cook Meat: In a skillet, cook the ground beef until cooked through. Drain fat. Add the taco seasoning, salsa, pepper, garlic powder, onion powder and dried oregano. Bring to a boil and then immediately turn the heat off.
- Prepare Pasta Mix: In a bowl, mix together the cooked pasta, 1 cup of the cheese and the sour cream.
- Layer Casserole: Pour half of the pasta into a casserole dish. Top with half of the meat mixture. Repeat layers. Top with the remaining shredded cheese.
- Bake: Bake in a preheated 350-degree F oven for about 30 minutes. Garnish with fresh chopped cilantro.
Notes
Garnish with fresh chopped cilantro for color. You can substitute penne with rotini, fusilli, or bowtie pasta. Ground chicken or turkey can be used as an alternative to beef.
