- 4 medium potatoes, sliced thin
- 1 cup onion, diced
- 1 cup carrots, sliced
- 1 can (10.5 oz) cream of mushroom soup
- 1 cup beef broth
- 1 teaspoon garlic powder

- ½ teaspoon black pepper
- 1 cup shredded cheddar cheese (optional)
- 1 tablespoon olive oil
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C).
- Brown the Beef: In a skillet, heat olive oil over medium heat. Add the ground beef, season with garlic powder, salt, and pepper, and cook until browned. Drain excess grease.
- Sauté Vegetables: In the same skillet, add the diced onions and sliced carrots. Sauté for about 5 minutes until they are slightly softened.
- Combine Soup and Broth: In a large mixing bowl, combine the cream of mushroom soup and beef broth. Mix well.
- Layer the Casserole: In a greased 9×13 inch baking dish, layer half of the sliced potatoes on the bottom. Then, add the cooked ground beef and sautéed vegetables.
- Add Soup Mixture: Pour the soup and broth mixture over the beef and vegetables, ensuring even coverage.
- Finish Layering: Add the remaining potato slices on top and season lightly with salt and pepper.
- Cover with Foil: Cover the dish tightly with aluminum foil to lock in moisture.
- Bake: Place the casserole in the preheated oven and bake for 30-35 minutes.
- Uncover and Add Cheese: After 30-35 minutes, carefully remove the foil. If desired, sprinkle shredded cheddar cheese on top.
- Bake More: Return the casserole to the oven and bake uncovered for an additional 15-20 minutes, or until the potatoes are tender and the cheese has melted.
- Cool & Serve: Remove from the oven and allow it to cool for a few minutes before serving.
Notes
For a spicier version, consider adding diced jalapeños or a dash of hot sauce. For a vegetarian version, substitute ground beef with lentils or plant-based meat alternatives.
