  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 23 cloves garlic, minced
  • 23 bell peppers, any color, chopped
  • 14.5 oz can diced tomatoes, undrained
  • 1.5 cups frozen or canned corn
  • 12 tsp chili powder
  • 1 tsp cumin
  • Salt & pepper, to taste

Instructions

  1. Brown the Turkey: Heat a large 10-inch skillet over medium-high heat. Add olive oil. Once shimmering, add the ground turkey. Break it up with a spoon and cook until nicely browned.
  2. Sauté the Veggies: Drain any excess fat if desired. Add the diced onion and bell peppers to the skillet. Cook, stirring occasionally, until softened and fragrant.
  3. Toast the Spices: Stir in the minced garlic, chili powder, and cumin. Cook for just 1 minute more, until fragrant.
  4. Simmer the Sauce: Add the undrained canned diced tomatoes and bring to a gentle simmer. Reduce heat to medium-low, cover, and cook for 10-12 minutes, allowing the flavors to meld beautifully.
  5. Add Corn And Season: Stir in the corn and cook for another 2-3 minutes, just until heated through and bright. Season generously with salt and pepper to taste.

Notes

Ground chicken or lean ground beef can replace turkey. Use fresh chopped tomatoes or frozen mixed peppers for convenience. Add a can of drained black beans for extra fiber. Enhance flavor with smoked paprika, cayenne pepper, fresh cilantro or parsley, or a squeeze of lime juice. If sauce is too thick, add 0.25 cup chicken broth or water. If turkey sticks, add 0.5 tbsp olive oil. Taste and adjust salt and pepper after simmering for best flavor. To reduce watery sauce, remove lid during the last few minutes of simmering.
