Description

Save time and money by making homemade grilled chicken nuggets! This recipe is a copycat of popular fast-food grilled nuggets, made with just a handful of simple, wholesome ingredients for a tender and juicy result.


Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into bite-size pieces
  • 12 tablespoons olive oil
  • 1/4 cup dill pickle juice
  • 3 tablespoons milk
  • 23 teaspoons brown sugar
  • 1/2 teaspoon kosher salt
  • 1/21 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1/21 teaspoon smoked paprika

Instructions

  1. Step: In a mixing bowl or gallon ziplock bag, combine the pickle juice, milk, brown sugar, salt, black pepper, garlic powder, and smoked paprika until well blended.
  2. Step: Add the chicken pieces to the marinade and toss to coat thoroughly. Refrigerate for at least 30 minutes, or overnight for extra flavor.
  3. Step: Preheat your grill or grill pan to medium-high heat until hot.
  4. Step: Remove chicken from the marinade, discard the excess brine, and pat the chicken pieces dry with paper towels.
  5. Step: Lightly grease the grill grates with olive oil to prevent sticking.
  6. Step: Place the chicken pieces on the hot grill and cook for 3-4 minutes on each side until the internal temperature reaches 165°F and nice grill marks appear.
  7. Step: Remove the nuggets from the heat and let them rest for a couple of minutes before serving.

Notes

Ensure chicken pieces are cut to a uniform size for even cooking. If you don’t have dill pickle juice, white or apple cider vinegar can be used, though the flavor will differ. Use a grill basket or skewers if you are concerned about pieces falling through the grates. To make keto-friendly, substitute sugar with a monk fruit sweetener and use heavy cream or almond milk instead of cow’s milk.
