  • 1 teaspoon kosher salt
  • 1 teaspoon freshly ground black pepper
  • 4 tablespoons unsalted butter, divided
  • 2 tablespoons olive oil
  • 6 cloves garlic, minced
  • 1/2 cup freshly grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon paprika
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/4 cup fresh parsley, chopped (for garnish)

Instructions

  1. Preparation: Preheat your oven to 400°F (200°C). Position a rack in the middle. Pat the chicken thighs dry with paper towels. Season both sides generously with salt and pepper. Heat an oven-safe skillet over medium-high heat. Add 2 tablespoons of butter and 2 tablespoons of olive oil. When the fat is shimmering, place the thighs skin-side down in the skillet. Sear for 6 to 8 minutes until the skin turns golden brown. Flip the thighs and cook for an additional 1 to 2 minutes. Remove chicken from the skillet and set aside.
  2. Making Sauce: Lower the heat to medium. Add the remaining butter and let it melt. Then, add the minced garlic, paprika, Italian seasoning, and red pepper flakes. Cook until fragrant. Stir in the grated Parmesan until it begins to melt. Return the chicken to the pan, and spoon the sauce over the top.
  3. Baking: Transfer the skillet to the oven and bake for 15 to 20 minutes until the internal temperature of the chicken reaches 165°F. For an extra crispy top, broil for an additional 1 to 2 minutes. Allow the dish to rest for 5 minutes before serving, garnished with chopped parsley.

Notes
