Ingredients

- Prep Potatoes and Garlic: Peel and chop potatoes into even 1-inch cubes. Mince fresh garlic. Place chopped potatoes in a large pot and cover with cold water by about an inch, adding a generous pinch of salt.
- Boil Potatoes: Bring the pot to a rolling boil over high heat, then reduce to a gentle simmer. Cook until potatoes are easily pierced with a fork (about 15-20 minutes). Drain very well in a colander and let them steam for 1-2 minutes to remove excess water.
- Mash Potatoes: Return hot, drained potatoes to the dry pot. Add 2 tablespoons (28g) of butter, the warmed milk or cream, and minced garlic. Mash with a potato ricer or hand masher until smooth and creamy. Avoid over-mashing. If dry, add 1-2 tablespoons more warmed milk or cream.
- Season and Taste: Stir everything together well, then taste. Adjust salt and freshly ground black pepper as needed.
- Make Brown Butter Pool: In a small saucepan, melt the remaining butter (about 6 tablespoons / 85g) over medium heat. Continue cooking, swirling occasionally, until the butter turns a rich golden brown and emits a distinct nutty aroma (3-5 minutes).
- Swirl in Chives: Remove the brown butter from the heat immediately to stop cooking. Stir in the freshly chopped chives until they are evenly distributed.
- Serve: Transfer the warm garlic mashed potatoes to a serving dish. Create a slight well in the center using a spoon, and carefully pour the entire warm brown butter pool with chive swirl over the top. Serve immediately.
