  • 1 1/4 cups (150g) shredded mozzarella cheese
  • 3/4 cup (100g) crumbled feta cheese
  • 1/4 cup (30g) fresh parsley, chopped
  • 1/2 teaspoon (2.5ml) sea salt
  • 1/4 teaspoon (1.25ml) freshly ground black pepper

Instructions

  1. Roast Garlic: Preheat oven to 400°F (200°C). Drizzle unpeeled garlic cloves with olive oil, wrap in foil, and roast for 25-30 minutes until soft. Cool slightly, peel, and mash into a paste.
  2. Caramelize Onions: Heat olive oil in a skillet over medium-low heat. Cook sliced onion and salt slowly for 25-35 minutes, stirring occasionally, until deeply golden brown. Cool completely.
  3. Prepare Compound Butter: In a medium bowl, combine the softened butter, mashed roasted garlic, cooled caramelized onions, chopped parsley, salt, and pepper. Mix until well incorporated.
  4. Slice Bread Loaf: Slice the baguette crosswise into 1-inch (2.5 cm) thick pieces, being careful not to cut completely through the bottom crust so the loaf remains intact.
  5. Stuff Loaf with Filling: Gently pull apart the slices and spread the compound butter mixture generously into each cut. Combine mozzarella and feta in a separate bowl, then stuff the cheese mixture on top of the butter in each cut.
  6. First Bake (Foil-Wrapped): Wrap the entire loaf tightly in aluminum foil and place on a baking sheet. Bake at 350°F (180°C) for 15 minutes to melt the butter and cheeses inside.
