- 1/4 cup freshly squeezed lemon juice
- 4 cloves garlic, minced
- 3 tablespoons extra virgin olive oil
- 1 tablespoon honey
- 1/4 teaspoon red pepper flakes (optional)
- 2 tablespoons fresh parsley, chopped
- Salt to taste
- Black pepper to taste

Instructions
- Step 1: In a medium bowl, whisk together lemon juice, minced garlic, olive oil, honey, red pepper flakes (if using), salt, and black pepper to prepare the marinade.
- Step 2: Add the peeled and deveined shrimp to the marinade, ensuring each piece is evenly coated. Cover and refrigerate for 15 to 30 minutes, but no longer to avoid cooking the shrimp with the acid.
- Step 3: Preheat grill to medium-high heat (about 400°F). Soak wooden skewers in water for at least 30 minutes if using. Lightly oil the grill grates.
- Step 4: Remove shrimp from marinade and let excess drip off. Thread 4-5 shrimp per skewer, piercing through the thickest part.
- Step 5: Grill skewers for 2-3 minutes per side until shrimp turn opaque with a slight char and are firm to the touch. Avoid overcooking.
- Step 6: Remove from grill and sprinkle with chopped fresh parsley. Optionally, squeeze extra lemon juice over the top before serving.
Notes
Do not marinate shrimp longer than 30 minutes to prevent the lemon juice from affecting the texture. Use tongs to handle shrimp gently. If you do not have a grill, use a grill pan or broiler.
