- 1½ lb boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 (15-ounce) can diced tomatoes, no salt added
- 1 (4-ounce) can green chilies
- 1 tbsp chili powder
- 1 tsp cumin
- 1 tsp smoked paprika
- ½ tsp salt
- ¼ tsp black pepper
- ½ tsp dried oregano
- 1 tbsp lime juice
- ½ cup low-sodium chicken broth
Instructions
- Step 1: Lightly coat the bottom of the crockpot with olive oil. Add the diced onion and minced garlic.
- Step 2: Place the chicken breasts on top of the onion and garlic mixture. Sprinkle chili powder, cumin, paprika, oregano, salt, and pepper evenly over the surface.
- Step 3: Pour the diced tomatoes with their juice, green chilies, and chicken broth into the crockpot.
- Step 4: Cover the crockpot with the lid and cook on low for 6 to 7 hours or on high for 3 to 4 hours.
- Step 5: Remove the breasts, shred the meat with two forks, return the shredded chicken to the crockpot, and stir in lime juice.
- Step 6: Simmer together for another 15 minutes on low heat.
Notes
Store leftovers in an airtight container with a bit of cooking liquid for up to 4 days. Serve with healthy toppings such as avocado or cilantro.
