Description
A quick, healthy dish featuring shrimp, zucchini, and a sweet-savory honey-garlic sauce, perfect for busy nights.
Ingredients
Scale
- 1 pound Shrimp (peeled and deveined)
- 3 tablespoons Honey
- 3 cloves Garlic (minced)
- 2 tablespoons Soy sauce
- 1 tablespoon Olive oil
- 1/4 teaspoon Red pepper flakes (optional)
- 2 medium Zucchini (spiralized or sliced into ribbons)
- 1 teaspoon Salt
- 1/2 teaspoon Pepper
- 1/4 cup Chopped fresh parsley or cilantro
- 2 pieces Lemon wedges
Instructions
- Step: In a bowl, toss shrimp with salt, pepper, and a drizzle of olive oil until evenly coated. Set aside to marinate while you prepare the rest.
- Step: Warm 1 tablespoon of olive oil over medium-high heat until shimmering (about 2 minutes).
- Step: Add shrimp in a single layer, cooking 2 minutes per side until pink and opaque. Transfer to a plate and keep warm.
- Step: Reduce heat to medium. Stir in minced garlic, honey, soy sauce, and red pepper flakes. Simmer for 1–2 minutes until glossy.
- Step: Return shrimp to skillet, tossing gently to coat in the glaze. Cook an extra 30 seconds until heated through.
- Step: In the same pan, add zucchini ribbons, seasoning lightly with salt and pepper. Sauté for 3–4 minutes until tender-crisp.
- Step: Garnish with fresh parsley or cilantro and lemon wedges to serve.
Notes
Choose fresh shrimp for the best texture. Avoid overcooking to maintain juiciness. Serve immediately for optimal texture.
