Description

Ingredients

  • 3 tablespoons Honey
  • 3 cloves Garlic (minced)
  • 2 tablespoons Soy sauce
  • 1 tablespoon Olive oil
  • 1/4 teaspoon Red pepper flakes (optional)
  • 2 medium Zucchini (spiralized or sliced into ribbons)
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper
  • 1/4 cup Chopped fresh parsley or cilantro
  • 2 pieces Lemon wedges

Instructions

  1. Step: In a bowl, toss shrimp with salt, pepper, and a drizzle of olive oil until evenly coated. Set aside to marinate while you prepare the rest.
  2. Step: Warm 1 tablespoon of olive oil over medium-high heat until shimmering (about 2 minutes).
  3. Step: Add shrimp in a single layer, cooking 2 minutes per side until pink and opaque. Transfer to a plate and keep warm.
  4. Step: Reduce heat to medium. Stir in minced garlic, honey, soy sauce, and red pepper flakes. Simmer for 1–2 minutes until glossy.
  5. Step: Return shrimp to skillet, tossing gently to coat in the glaze. Cook an extra 30 seconds until heated through.
  6. Step: In the same pan, add zucchini ribbons, seasoning lightly with salt and pepper. Sauté for 3–4 minutes until tender-crisp.
  7. Step: Garnish with fresh parsley or cilantro and lemon wedges to serve.
