- Marinate the Chicken: In a bowl, combine sliced chicken, soy sauce, and cornstarch. Toss well and let it marinate for about 10 minutes.
- Heat the Oil: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat.
- Cook the Chicken: Add the marinated chicken to the skillet. Stir-fry until the chicken is fully cooked and golden brown, about 5-7 minutes.
- Add Garlic: Stir in the minced garlic and cook for another 1-2 minutes until fragrant.
- Toss in Vegetables: Add the shredded cabbage, carrots, and mushrooms to the skillet. Stir-fry for another 2-3 minutes, ensuring the veggies remain crisp.
- Combine the Sauce: Pour in the hoisin sauce and mix well with all ingredients, allowing it to heat through.
- Warm the Pancakes: In another pan or microwave, warm the moo shu pancakes (or tortillas) for about 30 seconds until pliable.
- Assemble: Remove the skillet from heat. Spoon the chicken and vegetable mixture onto the center of each pancake.
- Wrap: Fold the pancakes over the filling to create a wrap. You can serve them open-faced or folded.
- Serve and Enjoy: Optionally, garnish with sesame seeds or additional green onions before serving.

For a vegetarian version, substitute chicken with tofu or tempeh. For a gluten-free version, use tamari instead of soy sauce and a certified gluten-free hoisin sauce.
