Instructions

  1. Prep Dates: If your dates feel firm, soak them in very hot water for 10-15 minutes, then drain thoroughly.
  2. Blend Ingredients: In a high-speed blender or food processor, combine the pitted dates, 0.5 cup hot water, sea salt, vanilla extract, and coconut oil or unsalted butter. Blend until smooth and creamy.
  3. Adjust Consistency: Check consistency after blending. If too thick, add more hot water (1 tablespoon at a time), blending after each addition until desired smooth consistency is reached.

Notes

Use Deglet Noor dates if Medjool are unavailable (may need longer soaking). Adjust water for desired thickness. For a richer flavor, toast dates lightly for 5 minutes at 350F (175C) before blending. To save time, use pre-pitted dates. Flavor boosters include cinnamon, orange zest, espresso powder, or almond butter. For grainy caramel, continue blending; if too thin, chill or add more dates; if too thick, add more hot water slowly. A sprinkle of flaky sea salt on top offers extra crunch and visual appeal.
