Description

Chicken Kiev is a classic Eastern European dish of tender, juicy, chicken rolled with flavorful herb butter and wrapped in a crispy coat of breading.


Ingredients

  • 4 boneless skinless chicken breasts (68 oz. each)
  • Salt
  • Black pepper
  • 8 tbsp unsalted butter, softened
  • 3 garlic cloves, pressed
  • 3 tbsp fresh minced parsley
  • 2 tbsp minced chives
  • 2 tbsp fresh minced dill weed
  • 1 lemon, zest only
  • 4 eggs
  • 3 cups Panko bread crumbs
  • 1 cup all purpose flour
  • 1 1/2 tsp garlic powder
  • 1 tbsp dried parsley
  • 1/2 tbsp dried dill weed (optional)
  • 23 cups canola oil

Instructions

  1. Compound Butter: Mix softened butter with minced herbs, garlic, lemon zest, salt, and pepper. Spread butter in a log-like shape on plastic wrap, wrap tightly, and place into the freezer for about 15 minutes.
  2. Prepare Chicken: Butterfly the chicken breasts by slicing through the center without cutting completely through. Place in a zip-lock bag and pound with a meat tenderizer to between 1/4 and 1/8 of an inch thick. Season both sides with salt and pepper.
  3. Roll and Chill: Slice the butter log into 8 even slices. Place two slices of butter on each chicken breast, roll tightly into a pocket, and wrap securely in plastic wrap. Refrigerate for at least 2 hours or overnight.
  4. Prepare Batter: Preheat oven to 350°F and heat oil to 350°F. Prepare three bowls: one with whisked eggs, salt, and pepper; one with flour, salt, pepper, and garlic powder; and one with Panko crumbs, dried herbs, salt, and pepper.
  5. Bread the Chicken: Remove chicken from plastic. Dredge in flour, then egg, then Panko crumbs. Repeat the process (flour, egg, Panko) for a double coating, pressing gently with hands.
  6. Fry: Carefully add chicken to the oil and fry for 3-4 minutes per side until deep golden brown.
  7. Bake: Place fried chicken on a wire rack over a baking sheet. Bake for 20-24 minutes.

Notes

Compound butter can be stored in the fridge for up to a month or freezer for 3 months. Chilling the rolled chicken for at least 2 hours is essential to keep the butter inside during cooking.
