Description

This recipe features flaky white fish coated in a flavorful almond-za’atar crust and drizzled with a tangy yogurt-lemon sauce, offering a taste of the Mediterranean in under 30 minutes.

  • 4 pieces White Fish Fillets (600g / 1.3lb)
  • 2 tbsp Extra-Virgin Olive Oil (30ml)
  • 1 Lemon (zest and juice of 1/2)
  • 2 tbsp Almond Flour (30g)
  • 2 tbsp Toasted Almonds (15g, finely chopped)
  • 1 tbsp Za’atar Spice Blend (8g)
  • 1 tsp Smoked Paprika (5g)
  • 1 clove Garlic (minced)
  • 5oz Plain Yogurt (150g)
  • 1 tbsp Water (15ml)
  • Salt & Pepper to taste
  • 2 tbsp Fresh Parsley (chopped)
  • 1 tbsp Toasted Pine Nuts (10g, for garnish)

Instructions

  1. Prep Oven & Pan: Preheat oven to 400°F and line a baking sheet with parchment paper.
  2. Season Fish: Pat fish dry, season with salt & pepper, and place on the baking sheet.
  3. Make Crust: Combine almond flour, almonds, za’atar, paprika, lemon zest, and 1 tbsp olive oil.
  4. Apply Crust: Press crumb mixture evenly onto the fish fillets.
  5. Bake Fish: Bake for 12-15 minutes, until fish flakes easily.
  6. Make Sauce: Whisk yogurt, lemon juice, remaining olive oil, water, and salt.
  7. Rest & Plate: Let fish rest for 2 minutes before plating.
  8. Garnish & Serve: Drizzle with sauce, sprinkle with parsley & pine nuts.

Notes

Patting the fish dry is crucial for a crispy crust. Feel free to substitute nuts or za’atar based on preference.
