- 300g banana peppers: sliced into coins, seeded
- 120g all-purpose flour
- 60g fine cornmeal
- 1 tsp smoked paprika
- 0.5 tsp ground cumin
- 0.5 tsp sea salt
- 0.25 tsp black pepper
- 120ml cold sparkling water
- 1 large egg, lightly beaten
- 30ml olive oil
- 2 tbsp honey
- 1 tbsp lime juice
- 1 tsp rice vinegar
- 0.5 tsp grated ginger
- 1 tbsp sesame seeds
- 1 tbsp chopped cilantro
- 1 radish: thinly sliced
- Microgreens
Instructions
- Prepare Peppers: Slice and seed banana peppers, pat dry.
- Combine Dry Ingredients: Whisk flour, cornmeal, paprika, cumin, salt, and pepper.
- Make Wet Batter: Whisk egg, sparkling water, and 1 tbsp olive oil.
- Double-Coat Peppers: Coat peppers in flour, then batter, then flour again.
- Air Fry: Spray with oil, air fry at 200°C (390°F) for 8-9 minutes, shaking halfway.
- Make Glaze: Simmer honey, lime juice, vinegar, and ginger.
- Glaze & Garnish: Drizzle glaze, sprinkle with sesame seeds, cilantro, radish, and microgreens.
- Rest & Serve: Let rest for 2 minutes before serving.

For extra crispiness, ensure peppers are thoroughly dried before coating and avoid overcrowding the air fryer basket.
