Description

Creamy Tuscan Shrimp is a delicious one-pan 30-minute restaurant-quality meal featuring spinach, artichokes, sun-dried tomatoes, and garlic. It is low-carb, high in protein, and gluten-free.


Ingredients

  • 1 lb raw shrimp (large, peeled, and deveined)
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon Italian seasoning
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper (coarse)
  • 5 cloves garlic (minced)
  • 2 tablespoons olive oil
  • 4 oz sun-dried tomatoes (chopped)
  • 14 oz artichoke hearts (drained and chopped)
  • 4 oz fresh spinach
  • 1 cup heavy cream
  • 1/4 teaspoon smoked paprika
  • salt to taste

Instructions

  1. Step: Season the shrimp with smoked paprika, Italian seasoning, salt, and black pepper.
  2. Step: Heat olive oil in a large skillet over medium-high heat; add shrimp and minced garlic, cooking for about 2 minutes per side, then remove shrimp to a plate.
  3. Step: In the same skillet, add chopped sun-dried tomatoes and artichokes, stirring for 1 minute on medium heat.
  4. Step: Add fresh spinach and cook until wilted.
  5. Step: Stir in heavy cream and paprika, bringing to a simmer for about 1 minute; season with salt if needed.
  6. Step: Return the seared shrimp to the skillet, spooning the sauce over them, and simmer for 2 minutes or more until shrimp are fully cooked through.

Notes

For a low-carb option, serve over roasted broccoli or zoodles. For a more comforting meal, serve over pasta or gnocchi.
