Description

  • 4 boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese (microbial-rennet)
  • 1 cup fresh spinach
  • 1/2 cup sun-dried tomatoes, chopped
  • 4 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Step: Season the chicken breasts with salt, pepper, and Italian seasoning.
  2. Step: Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook for 5-7 minutes per side until golden brown and cooked through. Remove from the skillet and set aside.
  3. Step: In the same skillet, add minced garlic and sauté for 1 minute until fragrant.
  4. Step: Pour in the chicken broth and heavy cream, stirring to combine. Bring to a simmer.
  5. Step: Add the Parmesan cheese and stir until melted and the sauce starts to thicken.

Notes

For a dairy-free version, try using coconut cream and nutritional yeast instead of heavy cream and Parmesan. This dish can be served over pasta, rice, or zucchini noodles.
