- 800g (1.75lb) Ripe Tomatoes, chopped
- 250g (9oz) Ricotta Cheese, full-fat
- 2 tbsp (30ml) Extra-Virgin Olive Oil
- 3 cloves Garlic, minced
- 1 tsp (2g) Smoked Paprika
- Zest of 1 Lemon
- 30g (1oz) Pine Nuts
- Fresh Basil Leaves, torn
- Salt and Pepper to taste
Instructions
- Cook Pasta: Boil pasta until al dente, reserving 120ml pasta water.
- Sauté Garlic: Heat olive oil, sauté garlic until fragrant (about 1 minute).
- Simmer Sauce: Add tomatoes, salt, pepper, and paprika; simmer for 10-12 minutes.
- Prepare Ricotta: Combine ricotta, lemon zest, and 2 tbsp pasta water; mix until smooth.
- Combine: Fold ricotta into tomato sauce, adding pasta water to adjust consistency.
- Coat Pasta: Add drained pasta to sauce and toss to coat.
- Toast Nuts: Toast pine nuts until golden brown.
- Serve: Plate pasta, garnish with pine nuts and basil.
Notes
For a richer sauce, use full-fat ricotta. Toasting pine nuts enhances their flavor. Reserve pasta water for a creamy consistency.
