Description

Caramelized sweet potatoes on the bottom, crispy taco beef in the middle, and a creamy blended cottage cheese street corn topping piled over everything, finished with Tajin and a drizzle of hot honey.


Ingredients

  • 4 medium sweet potatoes, peeled and diced into 1-inch cubes
  • 1 Tablespoon olive oil
  • 1 teaspoon kosher salt
  • 1 teaspoon garlic powder
  • 1 cup canned corn, drained
  • 16 oz full-fat cottage cheese
  • 1 clove garlic, grated
  • 2 Tablespoons lime juice
  • 1 teaspoon kosher salt
  • 2 oz feta cheese, crumbled
  • 1/4 cup finely chopped cilantro
  • 1/4 cup diced green onions
  • 2 teaspoons Tajin
  • 1 Tablespoon olive oil
  • 1 lb ground beef
  • 1 standard taco seasoning packet
  • Hot honey, cilantro, or pickled red onion for serving

Instructions

  1. Step: Preheat the oven to 425°F. Toss the sweet potatoes with oil, salt, and garlic powder and spread in an even layer. Bake for 20-25 minutes, until fork-tender and deeply golden on the bottom.
  2. Step: Blend the cottage cheese until smooth. Mix with the corn, grated garlic, lime juice, salt, feta cheese, chopped cilantro, diced green onions, and Tajin. Store in the fridge until ready to serve.
  3. Step: Heat the olive oil in a medium skillet over medium-high heat. Add the ground beef, press it down to create sear marks, and cook until no pink remains. Add the taco seasoning and follow the packet directions.
  4. Step: Layer sweet potatoes, taco meat, and street corn in bowls. Finish with pickled red onion, fresh cilantro, and a drizzle of hot honey.

Notes

For the best caramelized bottoms, do not stir the sweet potatoes while roasting. Use small curd full fat cottage cheese for the creamiest topping. For meal prep, store the three main components separately in the fridge for up to four days.
